If you're looking for something to do today then grab a spoon because it's National Butterscotch Pudding Day!  Don't worry; Mom said it's OK!  Let's get right into celebrating National Butterscotch Pudding Day!

WHY IS THIS A HOLIDAY?  

Well, pudding is well-loved by many, especially kids, so in terms of popularity, we're already off to a good start! But then you add in the flavor of butterscotch and some taste buds are attracted to it like a magnet. It's not the chocolate or vanilla pudding they're use to... It's not clumpy tapioca pudding... No, it's butterscotch pudding! And this welcomed flavor, coupled with the popularity of pudding, was bound to sprout yet another food holiday. And yes, that day is today!  First let's take a look at pudding... To make a pudding you'll usually use some kind of sugar, milk, eggs and cornstarch and then heat it up on the stove. As the water evaporates and the cornstarch works its magic, the mixture starts to thicken up. It's kind of like a custard and there are many instant versions, but if you make it on the stove be sure to keep stirring it or you'll burn the bottom!

But how do you create a butterscotch flavor? Well, all you really need is some brown sugar and butter. These two flavorful ingredients, when heated up and mixed together, create that lovely butterscotch flavor we all love. But if you want to go with the original recipe, from an 1848 newspaper, then grab yourself a pound of sugar, a pound of butter and a quarter pound of treacle, which is any syrup that is made during the refining process of sugar.  And there you go folks!

HOW TO CELEBRATE 

So, how can you celebrate today?  Well, the easiest way is going to be to head to your grocery store and pick up some premade butterscotch pudding. Yep, tons of companies pop this lovely slop into little cups for you so that you can eat it anywhere you want. So get creative and eat it... on top of your car or something. And if anyone asks you what you're doing then invite them up and hand them some pudding!  But if you want to put in a little work then you can grab an instant version and whip up a giant batch of butterscotch pudding. If you have kids then have them help out and give them a whopping bowlful as a reward. I have a feeling you're going to end up with a house full of satisfied stomachs today!

And hey, if you aren't down with using an instant mix then you can always whip this up from scratch. The ingredients are pretty common and the only thing that takes a while is waiting for the mixture to thicken up. Just take turns stirring it and you should be good to go!
