If you're looking for something to do today then slap some light, sweetness on your tongue because it's National Lacy Oatmeal Cookie Day!  Just because they're lacy and full of holes doesn't mean they're any less satisfying!  Let's get right into celebrating National Lacy Oatmeal Cookie Day!

WHY IS THIS A HOLIDAY?  

I'm sure you're wondering why anyone would be celebrating these cookies but once you taste them you might see why. Lacy oatmeal cookies are thin cookies that are full of holes and air pockets but they taste is so good that you'll find yourself reaching for another. And because they're so delicious they deserve to be celebrated for at least one day!  But there's really not much too these cookies at all. You've got some oats to give it texture and heartiness, some all-purpose flour like almost all cookie recipes call for and a little bit of salt for that underlying flavor booster. Then you've got some baking powder to help them rise a little bit and spread, some sugar for the sweetness desired in all cookies and a bit of butter to seal the deal with the sugar/fat combo.

You may not realize it but that combination of sugar and fat makes our tongues do backflips! Honestly try this out. Eat a spoonful of straight sugar... it doesn't taste bad but it's just gritty and seems like it's lacking something, right? Now eat a spoonful of straight up butter... a decent taste but too oily and kind of gross, huh? Now take a little bit of butter, sprinkle sugar all over it and taste that... did your tongue do a mini backflip?  Now all you need to do to finish off your recipe is add in some egg to hold everything together and to help your cookies rise a little bit. And then add in a little vanilla extract to round off the flavor and you're ready for some delicious lacy oatmeal cookies!

HOW TO CELEBRATE 

So how can you celebrate today?  Well, I'm not sure if any companies make these pre-packaged for your convenience but if you want you can hunt your grocery shelves for them. You might have a little more luck going to a local bakery to see if they're down with the laciness.

And if not, then you can whip these up yourself! It really isn't difficult and they're ready to eat in no time. And since they're so thin you don't really need too much for ingredients, which means you can make a ton of these if you want! Really, look at the picture to the right; that makes a dozen! A little goes a long way with these cookies. Just keep pumping out dozen after dozen and feed your friends, family and coworkers these tasty cookies all day!  These spread a lot when you bake them so be sure to give them a good amount of space between them and only use a teaspoon of the dough per cookie.  It doesn't matter what you decide to do today but if you have 20 minutes to spare then whip up a batch of these babies!
