If you're not sure what to do today then grab a fork and get ready to taste a little bit of heaven because it's National White Chocolate Cheesecake Day!  WARNING: This flavor combination may result in you eating the whole cake in one sitting.  Let's get right into celebrating National White Chocolate Cheesecake Day!  

WHY IS THIS A HOLIDAY?  

With the powers of white chocolate and cheesecake combined do you really need to ask why people would want to celebrate this dessert? White chocolate is a creamy substitute to milk chocolate and then cheesecake is such a rich cake that makes you truly savor each bite... it's no wonder why today is a holiday!  Cheesecake has actually been around since the times of ancient Greece! The Greek physician, Aegimus, actually wrote a book all about making cheesecake. And you know, if I had cheesecake I wouldn't feel that bad about living without running water, electricity and gasp... the internet! Ancient Greece doesn't sound too bad now ;).  Fast forward to 1872 when William Lawrence and a few other people were trying to make Neufchatel cheese. They made a mistake and ended up with an unripened cheese that was heavy and creamy. He started distributing his accidental cheese in foil and it soon became known as Philadelphia cream cheese. Then, in 1912, James Kraft came up with his own pasteurized version of this cheese to create the type of cream cheese that we use today in cheesecakes.  A cheesecake usually consists of things like cream cheese (of course), cream, sugar and eggs. You whip it up and pop it on top of a crust that's commonly made from graham crackers or crumbled cookies. Then you bake it, try to let it sit overnight in your fridge and slice into it and enjoy! But for today you'll want to melt down some white chocolate and add that into the mix before you bake it. Can't forget that!  Is your mouth watering yet?

HOW TO CELEBRATE 

So how can you celebrate today?  Well, the best and easiest option might be to head on over to the Cheesecake Factory and get a slice of white chocolate cheesecake from them.  It might be a little pricey but you don't have to wait to cook it and they're sooo good at making cheesecake!  They also have a ton of different flavors for you to try out.  But if you don't feel like heading to a mainly dessert restaurant then you can just order up a slice when you go out to eat at a different restaurant.  Or you can head to the grocery store and see if they don't already have a white chocolate cheesecake waiting for you.  That's right, a whole cake just for you!  ...and maybe some family and friends.  Or you can take a stab at making one yourself.  You can go with a mix that doesn't require baking or you can go all out and make one from scratch.  It's really up to you and how much time you want to wait before shoveling it into your mouth!  You can get creative with the type of crust you use and if you add any fruit to it.  Crumbled cookies pressed into a crust is pretty common so go crazy with that.  What about a lemon cookie crust with a lemon sauce?  How about a ginger cookie crust with a blueberry topping?  Yeah, you better hurry and eat some cheesecake quick!  I know you're drooling on your keyboard.
